Vegetable Rava Idli recipe is a tasty, healthy, nutritious, fluffy, colorful idli recipe. Veg Idli is loaded with vegetables of your choice, spices and tempering.
Firstly, take a kadai and add oil, mustard seeds, urad dal, chana dal, hing and curry leaves.
When tempering starts crackled, add carrot, capsicum, onion, dry fruits, ginger and garlic. Cook for 3 minutes.
Add salt, turmeric powder, coriander leaves. Cook for 2 minutes.
Add semolina, roast for 5 minutes on medium flame.
Now transfer in another bowl and let it cool down till room temperature.
Then add curd and mix it properly. And cover it with a lid and leave for 10 minutes.
Add water as required. Do not add more water. Its consistency is like idli batter.
Now add fruit salt or Eno in it and mix it till fluffy.
Grease idli with oil and transfer this batter instantly in the idli stand. And steam this idli for 15 minutes on medium to high flame or till it cooks it properly.
Now remove this idli from idli stand. Your vegetable rava idli is ready to serve.
