How to make Restaurant style Veg Handi recipe at home with step by step photo recipe. Vegetable Handi recipe also called Veg Diwani Handi Recipe is filled with vegetables and flavor from spices. Veg Handi recipe is easy to make and it tastes exactly like restaurant style sabzi and good for health as it has lots of vegetables in it. As right now, I’m adding just cabbage, capsicum, beans, carrots, cauliflower and onion. But you can also add green peas and paneer for a taste of restaurant style or also you can add seasonal vegetables as per your choice.
Veg Handi Recipe
Basically, the recipe is made in wide Pot which is called as Handi, form that handi name is given to this recipe which is prepared in wide-pot but in house, there is no any facility regarding wide-pot so we make in general kadai. Yet the cooking techniques and recipes remain the same which gives the same taste. Generally, in restaurants, Veg Handi is served in round shape Pot, which is called as “Handi.” Though I didn’t have it to serve, so I served it in a serving bowl.
Veg Handi is a simple mixed vegetable curry recipe, which is prepared with onion, tomato, ginger, garlic and cashew paste. And if you want to go for Jain Version then just leave onion, garlic and ginger in the recipe. And served with roti, naan and rice.
Here I’m going to share some tips and suggestions for Veg Handi recipe. Firstly if you are going for Jain version then just skip onion, ginger and garlic and just make tomato and cashew gravy. In traditional veg handi, they add almonds also. But here I skipped to add, you can add in this recipe. Secondly, you can cut and add vegetables as per your choice. Then parboiled them with some salt or steam the vegetables in an idli cooker or steamer. Moreover boiled vegetables gave proper restaurant style taste to this recipe. Lastly, you can add fresh cream or homemade malai to it. However, you can add more milk and malai to veg handi for rich and shahi flavor.
Veg Handi Recipe
Ingredients
- 3 Medium Size Tomato (Roughly Chopped)
- 1 1/2 Medium Size Onion (Roughly Chopped)
- 3 Tbsp Cashew
- 3-4 Garlic Clove (Roughly Chopped)
- 1 Tbsp Ginger (Roughly Chopped)
- Water as required
- 2 Tbsp Oil
- 1 Tbsp Butter
- 1 Cup Cabbage (Finely Chopped)
- 1/2 Cup Onion (Finely Chopped)
- 1/2 Cup Carrots (Finely Chopped)
- 1/2 Cup Beans
- 1/4 Cup Cauliflower
- 1/2 Cup Capsicum (Finely Chopped)
- 1/4 Tbsp Turmeric Powder
- 1 Tbsp Red Chilli Powder
- 1/2 Tbsp Kashmiri Red Chilli Powder
- Salt as per taste
- 2 Tbsp Coriander Powder
- 1 Tbsp Kitchen King Masala Powder
- 1/2 Tbsp Garam Masala
- 1/4 Cup Milk
- 1 Tbsp Fresh Malai (Fresh Cream)
Instructions
- Firstly take a cooker and add roughly chopped tomato, roughly chopped onion, cashew, ginger and garlic.
- Now add ¼ cup of water in it. Then cover the cooker with lid and cook for 4-5 whistle on low to medium flame.
- Cool completely and blend to a smooth paste without adding more water. Then sieve once so paste goes very smooth and there is no any lumps.
- Furthermore, take kadai and add oil and butter in it.
- Then add capsicum, onion, beans, carrots, cauliflower and cabbage in it and saute till transparent.
- Now remove it in another bowl.
- In the same kadai, add coriander powder, turmeric powder, red chilli powder and kashmiri red chilli powder. Saute dry masala for 10-20 seconds.
- Add tomato and onion gravy in it and mix well. Then add salt in it. And again mix gently.
- Now cover the kadai with a lid and simmer.
- When oil starts to separate from gravy then add garam masala and kitchen king masala.
- Again simmer till oil separates from the gravy.
- Now add milk and water in it and simmer for 5 minutes.
- Then add sauteed vegetables in the gravy.
- In last, add malai and mix well.
- Veg Handi is ready. Enjoy it with homemade wheat butter chapati or butter tandoori roti.

Tips to Making Veg Handi Recipe
- Firstly, add vegetables of your choice like corn, pumpkin, green peas, drumsticks and paneer.
- Furthermore, boiled or steamed vegetables first, instead of cook vegetables in gravy and later add to gravy for less consuming time.
- You can also add cashew and almond paste in the gravy for traditional Veg. Handi recipe which taste more royal.
- Lastly, this Veg. Handi recipe served with any kind of Indian Flat Bread.
