Ingredients
- 1 Tbsp Oil
- ½ Tbsp Mustard Seeds
- 1 Tbsp Urad Dal
- 1 Tbsp Chana Dal
- ¼ Tbsp Hind (Asafoetida)
- 8 Curry Leaves
- ½ Cup Capsicum (Chopped)
- ½ Cup Carrot (Chopped)
- ½ Cup Onion (Chopped)
- 1 Tbsp Ginger Garlic (Chopped)
- 2 Tbsp Dry Fruits – Cashew and Almond (Chopped)
- ½ Tbsp Turmeric Powder
- Salt as per Taste
- 2 Tbsp Coriander Leaves (Chopped)
- 1½ Cup Semolina (Suji or Rava)
- ½ Cup Curd
- Water as Required
- 2 Tbsp Eno
Instructions
- Firstly, take a kadai and add oil, mustard seeds, urad dal, chana dal, hing and curry leaves.
- When tempering starts crackled, add carrot, capsicum, onion, dry fruits, ginger and garlic. Cook for 3 minutes.
- Add salt, turmeric powder, coriander leaves. Cook for 2 minutes.
- Add semolina, roast for 5 minutes on medium flame.
- Now transfer in another bowl and let it cool down till room temperature.
- Then add curd and mix it properly. And cover it with a lid and leave for 10 minutes.
- Add water as required. Do not add more water. Its consistency is like idli batter.
- Now add fruit salt or Eno in it and mix it till fluffy.
- Grease idli with oil and transfer this batter instantly in the idli stand. And steam this idli for 15 minutes on medium to high flame or till it cooks it properly.
- Now remove this idli from idli stand. Your vegetable rava idli is ready to serve.

9. Grease idli with oil and transfer this batter instantly in the idli stand. And steam this idli for 15 minutes on medium to high flame or till it cooks it properly.
10. Now remove this idli from idli stand. Your vegetable rava idli is ready to serve.
Tips to Making Vegetable Rava Idli #
- Firstly, use medium semolina and roast on a medium flame for some time, else idli may turn sticky and hard.
- Additionally, add eno instead of fruit salt for spongy and soft idli.
- Steam this idli on medium flame.
- Cook veggies for 50% only. Because it will already be cooked while steaming the idli.
- Add veggies of your choice and other ingredients for a variation like a carrot, french beans, capsicum, onion, green peas, chopped dry fruits, etc.
